A pair of Vancouver bartenders will compete in Tuesday’s final of the Bacardi Legacy Cocktail Competition to see who will represent Canada at the Global Legacy Competition in San Francisco in May.

Roland Mueller of Burrard Public House and Giancarlo Quiroz Jesus from The Diamond will battle six other finalists in creating a new “Bacardi legacy cocktail” in front of 150 spectators and a panel of judges at a secret location that won’t be revealed until tomorrow for some reason.

On Friday, Mike Shum, bartender at the Fairmont Pacific Rim and Bacardi Portfolio Regional Brand Ambassador for British Columbia, gave us a sneak preview of what to expect at the competition. Shum used Bacardi 8 Years Old Rum (aka Bacardi Ocho) muddled with chili, cinnamon and tamarind to make what he called a twist on an old fashion.

In 2015, Shum won the first Canadian Bacardi Legacy Cocktail Competition for his Chan Chan cocktail.

Here is his winning recipe:

Chan Chan

Chan Chan cocktail

• 45 ml Bacardi Superior Rum
• 10 ml Martini Dry Vermouth
• 10 ml St-Germain elderflower liqueur
• 15 ml fresh squeezed lime juice
• 10 ml simple syrup
• 3 dashes of Peychaud’s bitters
• for garnish: edible flower
